TEMP_ 300 degrees Place butter and sugars in bowl with paddle attachment. beat until light and fluffy about 6 minutes then egg and vanilla until well combined.
In another mixing bow combine the flour, baking soda and salt. Then slowly add this mixture to wet ingredients while beating on low. Once added beat and additional 15 seconds. Then stir in the chocolate chips and ground coffee.
Using a 1 once scoop drop onto greased cookie sheet , I would use a Silpat if you have it. Space about 3 inches apart. then gently press to make 2 inch round circles. Bake for about 20 minutes until brown around the edges. Cool and remember to grease the pan in between bakings! ENJOY!
