That's when it's time to use my limited baking skills to make a snack cake.
That doesn't mean I have zero baking skills. I have plenty enough to make comfort foods when I need them, and snack cakes top my list if they contain fruit.
I'm a fan of using a variety of fruits in my snack cakes because they add a natural sweetness that allows me to cut back on refined sugars.
I love the combination of pears and apples. There's something about the tartness of apples, that works well with the soft sweetness of pears.
This snack cake has oats in the mix, along with a touch of honey, so I'm not feeling too badly about my comfort food treat.
If you've read along this far, I'm guessing you're wondering why I had a challenging week, and I won't keep you in suspense.
