My Holiday Dinner: Balsamic Rosemary Pork Tenderloin with Potatoes and Onions, Laura Vitale's Recipe

Once I've already written about my obsession with Laura Vitale. What a passionate chef she is! And for our benefit all the recipes are just excellent, foolproof and easy to replicate.  I was thinking what to make for a holiday dinner or rather a few dinners, something that doesn't require much effort and time but looks impressive. This balsamic rosemary pork tenderloin seemed to meet all of my demands and I gave it a go. The meat turned out to be juicy and delicious and to tell the truth it couldn't be easier to make. The potatoes were perfectly baked, slightly golden brown and just melted in the mouth. And the smell of rosemary in the kitchen! What can be more festive? I substituted pearl onions with regular onions but it tasted marvelous all the same. Here's the link to the recipe on Laura's website.
 I used Il Grezzo Extra Virgin Olive Oil and Monini Balsamic Vinegar for this dish.
