My Fitness Filled Weekend & Stuffed Peppers!

WOW. I am tired. This weekend was A LOT of fun but was busy! If you read my last post (sorry, it's been a little while since then) you know that I had a weekend full of fun fitness festivities! I'm now going to tell you how wonderful they all were!
First up was GoodLife's annual fundraiser for the GoodLife Kids Foundation called Spin4Kids. I was our team captain and our team raised just under $1400! It was 8 hours of spinning, and we switched up the person spinning every hour. I rode from 11-12 and it was fun! It was basically a spin class but with a lot more energy. I didn't snap any photos unfortunately because I didn't really know anyone I was spinning with and C was getting in a quick weight training workout before his turn to spin, so I just rode and didn't bother feeling awkward taking pictures. Boo. 3 people on our team won really neat prizes, including 2 Raptor's tickets and a $50 Starbucks card - how cool! It was a great day and I can't wait until next year! Remind me to do some spin classes before next year because my legs were DYING after yesterday!
Today was The Power of Movement! It was a 2-hour yoga class and it helped raise money for the Arthritis Foundation. There was 4 of us on team Hot Yogi's, myself, Michelle, Katy and Emily! It was a fun event and there were a TON of people doing yoga! It was neat to see that many people participating all at once. Here are some photos I snapped during the actual event:

At the end of the class they handed out a bunch of prizes, and both Michelle and I won! She won an amazing package full of yoga memberships and a loose leaf tea travel mug! I won a really neat YogaFit DVD as well as a strap for my yoga mat (which ironically I was telling Michelle I needed before we started the whole class!).

After the class we went to Balzac's on the Ryerson campus and met up with the lovely Krysten from Darwinian Fail! It was a first time meeting her for all of us! She's so cute and so nice, unfortunately she got called into work so she couldn't visit long, but it was nice to FINALLY meeting her in person after trying to plan a get together for months! We got to chat about her current training, her past training and just blog stuff in general, it was totally fun! I'm so glad we finally got to all meet up together, we definitely need to plan a more regular get together!

Katy wants everyone to know that the brownie she's eating is in fact healthy and made from chick peas!

So cool right? What a weekend! Needless to say now my coffee has worn off (I had a roasted almond mocha, made with almond milk - sooo good) I'm pooped!! I actually have to muster up some strength to try and get some studying in this evening! Maybe I'll make myself a delicious green tea.
I made my first ever attempt at stuffed peppers this weekend and it was an AMAZING experience. As you may (or may not) know, I've recently discovered how much I enjoy sweet bell peppers. It all started as a kind of "dare" to try them after years of thinking I didn't like them. Well basically finding out I love them has opened numerous doors for my recipe collection! So on Friday night I made stuffed peppers (after Michelle had posted a recipe, I decided to give it a go too!! Thanks for the inspo Bloggy bff :) ). So here's my take on stuffed peppers.
Sarah's Stuffed Peppers
Ingredients
- 1 lbs of lean ground turkey
- 1/2 of a sweet onion finely diced
- 2 tbsp of minced garlic
- 1.5 cups of mushrooms chopped up
- 3-4 handfuls of baby spinach
- some feta cheese (I don't know how much, I just used up what we had left in the fridge)
- seasoning of choice for your turkey
- EVOO
- 3 bell peppers
Directions
- Preheat oven to 180C or 350F
- Cut the top off the peppers and remove the insides. If your pepper doesn't stand straight up, cut the bottom a bit to balance it..
- Set the peppers aside, and bring your EVOO to a high temp, add garlic and onions and fry the onions until they become soft/transparent and fragrant.
- Add in turkey and mash it all up so they're aren't many big chunks. Season to your liking.
- Once the turkey is mostly cooked, add in the mushrooms and spinach and mix it all together and cover and cook for about 5 minutes.
- Add in your feta cheese if you're using it.
- Spoon mixture into the peppers and cover with tinfoil.
- Bake for 10 minutes, and then uncover and bake for another 15 minutes. The peppers should be soft and the tops are nice and golden brown. :) Enjoy!

As you can see, my one pepper fell over as I was taking it out of the oven.

I also fried up some plantains so we had those with the peppers for dinner! I didn't know if I was going to like it so I took the smaller of the two. Turns out I liked them more than C! I don't think he was a big fan, but I thought they were fantastic, so I will be making them for myself more often! :)
