My Favorite Things: A is for Arroz Caldo

When I was still living in the Philippines, one of my favorite "merienda" (snack) items is the delicious Arroz Caldo. 
Arroz Caldo means warm rice, literally. It resembles a congee and is made with rice and bits of chicken topped with toasted garlic and spring onions or scallions (and at times, with a hard-boiled egg). It is normally partnered with "tokwa't baboy" (tofu and pork).
