spicy mushroom biryani recipe with spicy masala base having green chillies,onions,mint leaves,ginger,garlic and coriander leaves.Hope you all enjoying the holidays and new year preparations going on:)Want to end this year with a one pot meal and this is our family recipe where we make this biryani whenever we got mushroom fresh from the stores.I make this extra masaledar recipe by adding roughly chopped onions to ginger garlic green chilli paste.

No need of mutiple spice powders here in the recipe,just add a hint of red chilli powder and garam masala is enough for the recipe.I already shared mushroom pulao recipe with step by step pictures,check that recipe for mild version.lets move on making the recipe.,

Along with this recipe,i posted 73 recipes this year and was little bit slow in the mid year posted 1 or 2 recipes per month due to personal issues.Next year will be experimental one and i already mentioned the recipes from my cookbooks.So stay tuned...

one pot meal using mushroom and spices

Ingredients

  • basmati rice - 2 cups,rinsed and soaked
  • mushroom - 200 gm,diced
  • onion - 2 finely sliced + 1 roughly chopped
  • Ginger -1/2 inch piece
  • garlic - 5 to 6 cloves
  • green chilli - 3 nos
  • mint leaves and coriander leaves - 1 cup
  • tomato - 1 finely chopped
  • cinnamon stick,green cardamom,black cardamom,cumin seeds,star anise - for tempering
  • salt - to taste
  • red chilli powder - 1/4 teaspoon
  • garam masala - 1/2 teaspoon
  • ghee/oil - as needed
Instructions
  1. In the pressure cooker pan,add oil and add cinnamon stick,green cardamom,black cardamom,cumin seeds,star anise to it.Once all get roasted well,add thinly sliced onions to it.
  2. Meanwhile make a paste with green chilli,ginger,garlic,mint and coriander leaves along with roughly chopped onions.
  3. Add this paste to it and saute it till it get done or oil separates.
  4. Now add tomatoes and sliced mushrooms and cook till the mushroom get cooked.
  5. Add the red chilli powder and garam masala to it and mix it well.
  6. Now add the soaked rice and add enough water to get the perfect fluffy rice.
  7. Wait till it came to boil and cover it with the lid and pressure cook in low flame for 15 minutes or 3 whistles.
  8. Once the pressure released ,remove the lid and fluff up the rice.
  9. serve it with onion raita.
