mughlai shahi paneer recipe - made with onion,cashew paste along with some cream to make it more rich.This recipe goes well with all parathas,rotis and chapatis and also with some spicy pulao and biryanis.

I already shared shahi paneer recipe which is more spicier version and made with yogurt instead of cream.here i made the recipe with cream and cashews along with some saffron soaked milk.As you all know am obsessed with paneer recipes and love to experiment with,so i searched some new recipes with paneer a month back and got this amazing at the same time very mild recipe which is perfect for this season.

I adapted the recipe from here and it was quite easy to make and saw so many versions having deep fried koftas in it and the same base gravy is added to it.I adapted this simple yet easy recipe for quick meal and this came out awesome and the flavors were delicious and you will definitely feel the difference in taste and texture with other usual paneer recipes.

For me,i get bored of same kinda onion tomato based paneer recipes or veg gravies and found a lot of other gravies with different combos in some cookbooks and in some blogs.This is absolutely delicious one with pepper and garam masala flavors in it and you do not want any other ingredient to go with.Cook the roughly chopped onions either in water or in milk and then make puree from it.The best technique to achieve color for the recipe is to slow cook ginger garlic paste,onion puree in low flame and keep on mixing it without browning them.I slightly browned the ginger garlic paste ,so the color is not exact white as the original recipe but this tasted divine with my methi paratha.

the shooting was really hectic that day and cant get enough light because of monsoon but managed to click a few pictures and light remains only few minutes.So planned to do the recipes in morning itself,so i can get sometime to shoot when enough light is available.

No tomato or tomato puree is required in the recipe,so you can make it very easily with some simple steps.You can skip cream and add yogurt along with some milk in the recipe.It tastes equally good with the original one but you have to use ghee instead of oil in the recipe.lets move on making the recipe.,

cottage cheese in onion cashew gravy spiced with saffron and black pepper

Ingredients
  • paneer , cubed - 10 pieces
  • onion - 3 , roughly chopped
  • cashews - 5 nos soaked in warm water
  • fresh cream - 1/4 cup
  • saffron - few strands soaked in milk
  • milk - 2 teaspoons
  • black pepper powder - 2 teaspoons
  • green chilli - 1 slit
  • ginger garlic paste - 1 teaspoon
  • garam masala - 1/4 teaspoon
  • ghee - as needed
  • bay leaf,cinnamon,cloves - for tempering
Instructions
  1. Cook roughly chopped onions in a sauce pan with enough water till it get soft.Once it get done,drain the water and make a fine puree from it.
  2. Make a paste from soaked cashews and mix it with cream and make sure all are evenly mixed.
  3. Now heat 1 tablespoon of ghee in a kadai,add bay leaf,cinnamon and cloves.Once it roasted well,add ginger garlic paste and green chilli.Roast it in low flame and do not brown them.
  4. Add the onion puree and cook till the ghee separates.Now add the cashew cream paste to it and mix it well.If needed add little water for mixing them.
  5. Add saffron soaked milk followed by black pepper powder and salt to it.Add 2 teaspoons of milk and adjust the consistency with enough water for the gravy.
  6. Cook it for 3 minutes and finally add the paneer cubes and garam masala and give a gentle mix.
  7. Switch off the flame and sprinkle a pinch of black pepper over it and serve.
