Moist Chocolate Cupcakes

Since I have basically nothing to do today, I decided to make chocolate cupcakes. I went online and found a recipe from The Farm Chicks blog. I love their blog, just found it this morning. It's wonderful! Wonderful cupcake recipe too! Makes my mouth water for more! It's a unique recipe, with lots of ingredients. 

                   INGREDIENTS

      ~ 1 cup sugar
      ~ 1 cup brown sugar (not packed)
      ~ 1 & 3/4 cup flour
      ~ 3/4 cup cocoa powder
      ~ 1 & 1/2 tsp baking soda
      ~ 1 & 1/2 tsp baking powder
      ~ 1/2 tsp salt
      ~ 2 eggs
      ~ 1 cup of milk
      ~ 1/2 cup olive oil
      ~ 2 tsp vanilla
      ~ 1 cup boiling water
Directions
Preheat the oven to 350 degrees. In a bowl, pour all the dry ingredients in...Sugar...


brown sugar.

flour....


cocoa powder

baking soda, baking powder and salt...



Now for the wet ingredients. Just keep them in the same bowl.Eggs....

Milk and oil....




vanilla....


Now mix all the ingredients together....

For the boiling water... take a 1 cup cup and fill it with water and pour it into a sauce pan. Bring it to a boil...

Now just pour it over the cupcake batter...


And mix together with a spatula. Scrape the sides so you get it all. It may be a bit watery, that's ok! Just stir it and then ladle it or scoop it into the cupcake liners.
When I got down to where there was hardly any cupcake batter left, I just poured it into the liners... left drips down the bowl. Looks really cool. 
Bake for 20-25 minutes (normal cupcakes)bake for 15 minutes (mini cupcakes)



 The batter made almost 3 pans of cupcakes! 1 mini cupcake pan, 2 big cupcake pans.
Let cool and frost....
