I love bread for its versatility.I often throw some type of sandwich for breakfast/snack even for light dinner when I really don't have time for an elaborate meal.Personally I just love bread,I often spread tomato chutney over a slice and toast it crispy with ghee-Yum my all time favorite quick fix snack,anytime of the day.Last week I made this quick vegetable-cheese crumble sandwich for snack,a nice change to very often made sandwich with cheese slice. This is a very simple yet brilliantly flavored sandwich with lots of herbs in it.I have used tomatoes,cucumbers and bell peppers along with cheese,you can veggies like baby corn,sweetcorn,cabbage and onions too.Its purely a matter of taste and availability.Same way you can use any kind of cheese you prefer,I have used cheddar as I had only that.I you want to cheese to melt nicely and ooze out,use mozzarella.Here I have used ghee and toasted it on tava,you can again toast it an oven or grill it too.In whichever way you do,this sandwich will be a winner and will please anyone who eats :)I served it with a nice cold drink and it was quite satisfying :)

Star ingredients:Veggies and cheese
Time:10 minutes+20minutes
Serves:3,6 sandwiches 

Ingredients:
12 bread slices
2 tomatoes,chopped fine
1 cucumber,peeled and chopped/grated
1 small green bell pepper,chopped very fine
1/4 cup grated cheese
1/2 teaspoon white/black pepper powder
1/2 teaspoon mixed herbs
Salt
Ghee for toasting
Method:
1.In a mixing bowl mix all the veggies along with grated cheese.Add salt,pepper and mixed herbs.Mix well.
2.Divide the veggie-cheese mixture into 6 equal portions.Keep each portion on each bread slice and cover with another slice.Prepare 6 sandwiches.
3.Heat a tava and toast the sandwiches one at a time with some ghee.You can make it as crispy as you like.Serve hot.
Notes:
1.You can skip ghee and oil if you wish.
2.I have use multi grain bread here,use any bread of your choice.
3.As I have mentioned above mix and match with any salad veggies and cheese.
