Mixed Berry Yogurt Crunch

So you have traded in your holiday destinations for the office or your daily grind, and while getting back into your routine, I am sure you are working hard on your New Year's resolutions, or should I say goals. Although it is unlikely, but not impossible, to reach all your goals this year it is still important to have them. It keeps you motivated and gives you direction, even if its for a short while at the start of the year.

My goals for this year are

  • spending more time outdoors with my camera and less time on my computer, ipad and laptop

If you are ever tempted by the fruit and yogurt cups with granola topping in the chill cabinets of your local convenience store, forget about them. They are more than likely loaded with sugar and saturated fats. Rather make your own - this version is low in sugar, uses home made yogurt (or buy a coconut yogurt or low fat one) and is topped with the best granola crunch you will ever taste.

Look at the nutritional values on your packet of store bought granola and you will be shocked to find that most have too much sugar and very little fibre. The solution ? Make your own and you will be in control of what you use. I only use organic rolled oats, nuts and seeds with flaked coconut, goji berries and cranberries and whatever nuts that I have at the time.
