Time flies when you’re having fun. This is a jam packed week. And exactly why my husband takes this week for vacation. With Halloween, my son’s birthday, and then my birthday we’re just very busy so I’m so happy to have him around to help out.

We’re going to have to get creative with dinner around here too. But that’s what makes the menu so important. Do you have a crazy busy week coming up? I’m willing to bet that with Halloween and trick or treating you might be looking for ways to eat a quick dinner before hitting the streets. Monica’s Menu For October 27, 2013 – November 2, 2013

Sunday: Sandwiches.
Monday: Leftovers.
Tuesday: Ranch chicken, egg noodles, and mixed vegetables.
Wednesday: Chicken quesadillas with carrots.
Thursday: Hot dogs with french fries and garden salad.
Friday: Birthday boy’s pick: Homemade macaroni and cheese with ham.
Saturday: My birthday pick is chicken parmigiana, but it’s my son’s party day and my head shaving day so maybe we’ll go out to eat.

Don’t forget daylight saving time ends this weekend, so before you go to bed on Saturday turn those clocks back and enjoy that extra hour of sleep.
