How are we already halfway through July? This is crazy. One more week and my husband is on vacation. I’m not counting down or anything. Neither is he, lol. Yeah right! We’re really looking forward to our staycation.

Monica’s Menu For July 14, 2013 – July 20, 2013
Sunday: Quesadillas with carrots.
Monday: Hot Pizza toss (recipe below).
Tuesday: Crock pot chicken and rice casserole.
Wednesday: Steak with baked potato and corn.
Thursday: Tacos.
Friday: Chicken Ceasar Salad
Saturday: Hot dogs and sausage patties with pasta salad.
Hot Pizza Toss Recipe
This is something that could be good at a picnic or just for dinner.
Ingredients
3 cups rotini pasta
3 cups (about 28 oz jar) spaghetti sauce
1 cup chopped green pepper
1/2 cup halved pitted large ripe olives
1/2 cup thinly sliced pepperoni, cut into halves
1 cup (4 oz) shredded mozzarella cheese
Grated Parmesan cheese
Directions
Cook pasta according to package directions, drain. Meanwhile in large saucepan over medium heat, stir together spaghetti sauce, green pepper, olives, and pepperoni; heat to boiling. Toss hot pasta, sause, and mozzarella cheese; sprinkle with Parmesan cheese.
