Melty Cinnamon Honey Butter

Thanks so much for your comments on this morning’s post. I think I finally hit a wall and had to make a change. I’m ready to make a change. Heck, I think I’m making a change.

One of my healthy habits I’m focusing on right now is eating a veggierific lunch. I normally eat leftovers from dinner, veggie focused of course. But today I made baked yams with melty cinnamon honey butter.

It’s so filling and such an easy recipe.

Here’s what ya do…

First preheat the oven to 375 degrees.

Pierce the yam with a fork and wrap with foil. Bake in the oven for 60-90 minutes. Depends on the size of your yam. 

Mine took a full 90 and was still a tiny bit undercooked in the middle.

While the yam bakes make the melty butter by combining:

  • 2 TBSP butter
  • 1 1/2 TBSP honey
  • 1 tsp cinnamon 
  • salt and pepper to taste

My oven get’s really hot on top, where the burners are. So I just set my little mixing cup of butter ingredients in the center of the stove top and it melted while my yam cooked.

When the yam is done, slice in half and mash a little. Pour the melty butter over the top. Sprinkle a little extra salt and pepper over the top for good measure and be ready to get stuffed!

I’m taking it easy today. I’m really sore from running Donner’s Hiking Trail yesterday and Sunday. My hips and upper quads are burning every time I walk around. 

I’m thinking a few stretching sessions this afternoon and a warm bath later.
