If you had asked me what does salsa mean few years back,I would have given a very clever answer-it is a dance style :). That is all I knew about salsa few years back,but thanks to my obsession towards blogging and reading many recipes sources,I got to know about salsa-meaning sauce in Spanish.I then read a couple of recipes here and there too.When I posted this quesadilla recipe here,a friend of mine suggested I make a mango salsa with that and she gave me the recipe too.So I waited for mango season and made the salsa along with this quesadilla.The salsa was brilliant to say the least. The mild heat from bell pepper was perfectly balanced by the sweetness of mangoes and I also added few raw mango pieces for extra zing. I also made many changes to the recipe based on our taste and availability of ingredients.I did not add onions as I was not sure if they will taste good with mangoes. I also did not have jalapenos so added green bell pepper and red bell pepper.Over all I was so delighted to have tried this salsa,hope you all will enjoy this vibrant sauce this summer :)
Mango salsa recipe
Star ingredient: Ripe mango
Time:10 minutes+30 minutes for flavors to mingle
Serves:3

Ingredients:
1 medium sized ripe mango,peeled and cubed
1 medium sized tomato cubed
1/2 green bell pepper,cubed
1/2 red bell pepper, cubed
1 small cucumber,peeled and cubed
Few raw mango pieces (optional)
Juice of one lemon
Salt and pepper to taste
Method:
1.Toss all the ingredients from ripe mango through raw mango and mix well
2.Add lemon juice,salt and pepper to taste.Mix well and let it rest for 30 minutes.
3.Serve with quesadilla,Mexican herb rice or any dish of your choice.\
Notes:
1.Add few jalapeno pieces if you can source.
2.You can skip tomatoes if you wish.
