Manathakkali Vatral Kuzhambhu

Yet another special dish of Tamilnadu- Manathakkali Vatral Kuzhambhu.Ingredients:
Manathakkali Vathal- 5 tbspOil- 2 tbspMustard- 1 tspFenugreek- 1 tspCurry Leaves - FewTamarind extract - 1 cupWater- 1 cupSalt as per taste
To Roast and Grind
Coconut- 1/2 cup (Shredded)Red Gram | Thoor Dhall- 5 tbspBlack Gram- 1 tbspPepper Corns- 2 tbspCumin- 1 tbspRed Chilly- 5 mosOil- 1 tbsp
Method:Heat a wok with 1 tbsp oil.
Roast thoor dhall, black gram, cumin, pepper and red chilly till a nice aroma arises.
Add coconut and fry till coconut turns mild brown.
Let the mixture cool and grind it with 100 ml water to make a smooth paste and set aside.
Heat the wok with 2 tbsp of oil.
Fry curry leaves, mustard.
Add manathakkali vathal and fry for 3 minutes.
Add the ground coconut masala paste and add 1 cup water.
Add salt, check and adjust now.
Add tamarind extract and let it boil for 10 minutes.
Put off the flame and serve hot with rice and pickle.
