Giuliano Hazan, the teacher of the course, is truly the expert on the subject. Listen to this: he studied at Marcella's celebrated School of Classic Italian Cooking, authored the international bestseller The Classic Pasta Cookbook, which was nominated for a James Beard Award. AND, he's a popular guest on The Today Show. You can understand why I felt rather honored to take his class.
Giuliano taught in a very easy way to understand and follow. He didn’t leave anything out while teaching so while making pasta you never felt lost. We learned all types of pasta including stuffed pastas. Since the receipes were ones that had been handed down over the generations they felt special and they are delicious!
I learned that pasta is finicky and doesn’t like cold temperatures (probably why it started in warm Italy!). The greatest tip I learned was not to rinse pasta EVER! The starches left over will help the sauce stick to the pasta. Additionally, always salt the water you boil your pasta in. That’s how it adds so many flavors.
