Maddur Vadai

By Harini
Maddur vadai happens to be a very famous snack of Karnataka. It gets its name after the place it was created-Maddur.Until very recent I have not heard about or tasted this special snack.I watched this preparation in TV show last week and I tried it very soon.It is a very easy recipe and instant one too, with no soaking grinding :). Perfect snack for monsoon evenings. We enjoyed it with a hot cup of coffee while it was pouring cats and dogs outside )Try this and I am sure you will like it.The recipe I am posting here is the one I prepared based on the TV show.Maddur vadai

Star ingredients:Rice flour,rava
Time:30 minutes
Yield:12-15 vadai
Ingredients:
1/2 cup fine rice flour
1/2 cup fine rava (sooji)
1/2 cup all purpose flour/maida mavu
3 green chillies
1 big onion chopped fine
2 tablespoons oil
Salt
Oil fro deep frying
Method:
1.Mix all the 3 flours with salt and mix well. Add 2 tablespoon oil and mix with your fingers.
2.Chop green chillies and onions.Add to the flour crumbs and mix well. Now add very little water and knead to a stiff dough.
3.Heat oil for deep frying.Take a small ball sized dough and flatten it like vadai.
4.Deep fry from both sides till golden brown.Remove it to a tissue paper, serve hot.

Notes:
1.I actually sauteed the onions before adding and they turned out black after deep frying. So add raw onions to the dough.
2.Can reduce maida and increase rava for more crisp vadai
