Low Cal Cherry Coconut Bars

I am a sucker for all things sweet. So when I come across Low Calorie Baked Good Recipes… I make em’. And make these I did… (not to mention I ate 3/4 of the tray). They are amazingly good, and soooo easy to make! Did I mention only 194 Calories??? 

{Recipe from Cooking Light, and makes 12 bars}

Ingredients

  • 3/4 cup all-purpose flour
  • 3 tablespoons confectioners’ sugar
  • 3 tablespoons cold butter
  • FILLING:
  • 1 egg
  • 2 egg whites
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup quartered maraschino cherries (I used regular cherries)
  • 1/3 cup chopped walnuts
  • 1/3 cup flaked coconut

Directions

Preheat oven to 350. In a food processor, combine confectioners sugar, butter, and flour, pulse until creates fine crumbs. Spray 8 by 8 baking dish with cooking spray, then press mixture into dish. Bake for 15 minutes until golden. While cooling, make filling.

For filling, combine the egg, egg whites, sugar and vanilla in a bowl. Combine the flour, baking powder and salt; add the egg mixture. Stir in cherries, nuts and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars. Refrigerate leftovers.
