Loving It Monday

By Greengirl @GrinGarl

Happy Monday! Just a couple of days away from Thanksgiving. Did you start cooking? I'm still adding and deleting dishes from the list. It's going to be my first vegan Thanksgiving and it's so hard to decide. Last Monday I told you I intend to share each week a couple of recipes that caught my eye during the previous week. Today I have 5 delicious ones. From stuffed pancakes to amazing desserts. Any one of them can end up on your Thanksgiving table, if you're still undecided.
For breakfast you can enjoy these Sweet Stuffed Pumpkin Pancakes from Eating and Living. They are not the American 5 minutes top pancake. These ones are a yeast based pancaked stuffed with brown sugar, cinnamon and chopped nuts. Now, tell me that doesn't sound like a great way to start your day.

Since pumpkin is still in season (the canned one is available year round anyhow) these White Chocolate Pumpkin Pie Cups from Live Life are a must. I'm telling you, my heart skipped a bit when I saw them and flooded my office from all that drooling. They are one of the cutest bite size desserts I've seen this week.
Changing diets is always a challenge. For the last couple of months I have tried to make vegan browned butter, unfortunately I still have to work on that. Sometimes I double that's even possible. I know how browned butter tastes in desserts and these Browned Butter Cacao Nib Cookies from All Day I Dream About Food make me drool instantly. I think one day I'm gonna walk off that butter they call for and just make some cookies. And the cocoa nibs, aren't they the cutest thing ever?
If you have a little time on your hand and want to see your guest blood sugar levels reach the sky, then this Chocolate Babka from Baker by Nature is the recipe to go to. It calls for
