Byron Bay Chopping Boards was established in early 2010 by chef, Simon Hart. Travelling through the beautiful hinterland of Byron Bay, he saw an opportunity to reduce invasive Camphor Laurel trees by making anti-bacterial chopping boards. Excited at this wood's unique properties, he began making chopping boards for other chefs and friends testing dimensions and finishes to arrive at the ideal food surface. Now Simon specialises in personalising their boards, adding messages for special occasions like weddings and engraving logos for businesses.

Made from one solid piece of timber, this chopping board is way too good for prepping food so I've been instead using it as a grazing platter and backdrop for my foodie cravings in the kitchen photos...

Simon tells me Camphor Laurel is a large evergreen tree which grows up to 20 metres. It was introduced into Australia from Asia in 1822 and has been promoted and planted as a garden ornamental throughout New South Wales and Queensland. While it is an attractive shade tree, it can be very destructive as it aggressively replaces native vegetation. Along the waterways of Northern New South Wales and South-East Queensland, Camphor laurels are replacing native blue gums.

It's great that Byron Bay Chopping Boards use Camphor Laurel timber for their boards as in doing so it gives our native Blue Gum trees more space to grow - the main food source for koalas.
