kulkuls-kalkals-kidyo-goan christmas recipe

kulkuls or kalkals recipe which is the recipe originated from Goa and the recipe is made during Christmas. Here comes the recipe with step by step pictures and this is my first try on the recipe and the shell shape came out better on my second try.

the recipe dough is similar to the dough we prepare for maida biscuits but semolina is avoided here in the recipe. In my no bake christmas recipe collection, here comes the next one which is deep fried one and you have to make only with all purpose flour and powdered sugar.i want to make the recipe chocolate flavored but am posting more chocolaty treats,so i want to make this in a traditional way.

here comes the step pictorial and how i made the cuties.,Use either fork or unused comb for getting the pattern.here i used fork for making the shape and grease the fork with tiny bit of oil to avoid sticking.

  • In a wide mixing bowl, take 1 cup of all purpose flour, baking soda, powdered sugar, vanilla essence and mix it well.
  • Meanwhile heat enough oil for deep frying.Lower the flame and get the dough ready.
  • Now to the flour mixture, add butter or add yogurt + ghee mixture which will be 1 tablespoon of yogurt and 3 teaspoons of ghee.If you are adding butter, then add 2 tablespoons.
  • Make a crumble like mixture from it.Slowly sprinkle water and make a soft dough.YOur dough should be like the dough we prepare for gulab jamuns. It should be soft and not elastic.

  • Divide the dough into smaller portions.Take one of those and smoothen it gently.
  • Grease oil in the back of the fork and gently flat the ball over it.

  • Roll it away from you to get a perfect impression from it.Dont over grease the fork, otherwise the impressions will fade away while deep frying.
  • Repeat the step for remaining portions and keep it ready for frying.

  • In low flame deep fry 5 to 6 kulkuls at a time and cook it till brown on all sides.gently stir the oil for even frying without disturbing the kulkuls.
  • Once it get done, remove it and drain excess oil in absorbent paper.
  • Immediately roll the drained ones in powdered sugar.
  • Store in an airtight container. This will lasts upto 2 days.
