Making kimchi soup is easy and fast! It is pretty much a one pot meal with well-balanced nutrition. Kimchi provides vitamins and mineral, pork and tofu give protein. It is comforting especially serving it hot or warm along with rice.
Plan to have kimchi noodles? This kimchi soup is great as soup base for kimchi noodles as well. Once the meat has cooked add in your preference noodles and cook accordingly. Add in tofu cubes about 3 minutes before your noodles done. Happy cooking!
Adapted and slightly modified from MaangchiKimchi SoupIngredients: (A)1½ cups kimchi, bite size pieces 200g skinless pork belly,sliced1 tablespoon pepper paste (gochujang)2½ cups water(B)300g soft tofu, cut into bite sized cubesA stalk of spring onion, dicedMethods:1. Add all ingredients A into cooking pot. Cook on medium high heat till boiling. Once boiling, reduce to medium heat and cook about 20 minutes or till meat cooked.2. Add in tofu cubes. Lower the heat and cook further 5 minutes. Add the diced spring onions and turn the heat off. Serve straight away!

What is kimchi?
~Kimchi is a traditional fermented Korean side dish made of vegetables with a variety of seasoning like chili peppers, garlic, scallions, and other spices. Among kimchi varieties, napa cabbage kimchi is very common.
