Kiki’s Kitchen: French Roasted Chicken

Roast chicken is one of my all time favorite meals! One of my lovely co-worked gave me her mother-in-laws french recipe for roasted chicken. I love this recipe and its the only way I will prepare my roast chicken. The fresh garlic, lemons, and bell pepper fragrant the chicken like you would believe…the flavors are addicting. It’s so simple to make and the chicken comes super moist and insanely delicious. Bon Appétit!

Ingredients

1 Whole Fryer Chicken

1 Lemon

1 Green Bell Pepper

3 Cloves of Garlic

Herbs de Provence

1/3 cup of Olive Oil

1/2 stick Butter (unsalted)

STEP One: Chop up lemons and green bell pepper into quarters. It will be easier for you to stuff inside the chicken.

STEP TWO: Stuff the chicken with the lemons, green bell peppers, and garlic cloves

STEP Three: Slice up a half of stick of (unsalted) butter.

STEP Four:  Place the butter on top of the chicken. Be sure to get the butter into every nook and cranny you can think of.

STEP Five: Take your seasonings and sprinkle it on top of the butter and chicken. Use as much or as little spices as you like. I went to town on my spices because I love the flavor.

STEP Six: Pour a 1/3 cup of extra virgin olive oil onto of the chicken.

Your chicken is ready to bake. Bake at 425 for 20 min and then 375 for 55min.
