Kid Friendly Vegetable Biryani

When you think of Eid, what is the first thing that comes to mind? Yes, there’s new clothes, gifts and visits, and of course, biryani! One of the great things about biryani is that every region has it’s own recipe, all though they all have one thing in common – they all taste awesome! Today, we have a lovely kid friendly vegetable biryani that’s not too spicy, but still flavorful and packed with colorful veggies!

Kid Friendly Vegetable Biryani

Ingredients:

  • 1/2 cup long grain rice, like Basmati rice
  • 1 onion, sliced
  • 2 tablespoon green peas
  • 1 tablespoon chopped french beans
  • 1 small carrot, diced
  • 4-5 cashew nuts
  • 2-3 tablespoon curd
  • 1 tablespoon ghee
  • 1 green chili (optional)
  • 1/2 inch ginger piece
  • 1/4 cup fresh coriander leaves
  • 1/4 cup fresh mint leaves
  • Salt to taste

Spices

  • 1 bay leaf
  • 1/4 teaspoon cumin seeds
  • 1-2 clove
  • 1-2 black pepper corn
  • 1 star anise

Method:

1. Rinse the rice well and soak in enough water for 10-15 minutes. Drain and keep aside.

2. Grind coriander leaves, mint leaves, green chili and ginger without adding any water. Keep aside.

3. Heat ghee in a pressure cooker. Fry the cashew nuts till golden. Keep aside.

4. Add the whole spices to the same pan and fry them for few seconds.

5. Next add onions and saute for 1-2 minutes. Follow with carrots, green peas and french beans and fry for another 2-3 minutes till done.

6. To the stir fried veggies, add the ginger and coriander mint paste. Stir, add the curd and stir again.

7. Next add the soaked, drained rice and fry for a minute.

8. Add a cup of water and salt to taste. Put on the lid and pressure cook for 2 whistles.

9. Open the lid once the pressure has released. Fluff the biryani with a fork and serve.

This kid friendly Vegetable Biryani is a delicious one pot meal which means less washing up!The fact that everything is cooked at once without any precooking makes this easier. Now all you need is some raita, a milky dessert like Sheer Khurma and you’re all set for your festive feast!
