Khara Buns

I love the soft,fluffy spicy khara buns we get in local bakeries in Bangalore..A very soft and fluffy buns with onion,cilantro leaves are my absolute favorite.These buns were in my to do list for a long time and recently I read a very doable recipe in a magazine.I tried it immediately with few changes.We loved it so much,it made a very nice dinner.I made it whole wheat instead of maida,though it was a little bit on a harder side it was very very tasty.Hope you will try it :)

Khara buns recipe
Star ingredients:whole wheat flour,onion,cliantro leaves
Time:10+45+20 minutes
Yield:9

Ingredients :
1 cup whole wheat flour
1/2 cup all purpose flour
1 onion sliced thin
1/4 cilantro leaves
2 green chillies chopped fine
1/2 teaspoon cumin seeds
1/2 teaspoon carom  seeds
1/4 cup oil
1/3 cup milk
2 teaspoons molten butter
Salt
1/4 cu luke warm water
1 teaspoon dry yeast
1 teaspoon sugar
Method:
1.Mix sugar and yeast in lukewarm water and let it proof for 10 minutes until the yeast turns frothy.
2.Take wheat flour in a wide bowl and add carom,cumin,salt and frothy yeast.Mix well.Add milk and oil and knead to a smooth dough.Let it rest for 30 minutes or until it doubles in volume.
3.After 30 minutes,punch the dough,add cilantro and sliced onions and knead well.
4.Shape into 9 medium sized buns and arrange on a baking tray.Leave it aside for 15 minutes.
5.In the meanwhile preheat oven at 200C.Bake the buns for 17-20 minutes.
6.Serve hot after brushing with molten butter.
Notes:
1.If you prefer real soft buns with light color use maida.I used wheat for health benefits.
2.You can add grated carrot in the dough along with onions.
3.Use good quality yeast else the dough will not raise.
