Kathrikai Sadham(egg Plant Rice-with out Grinding)

I think there in no need to introduce the famous vaangi bath.The secret behind this dish the well known vangi bath masala powder.In our home my mom makes a quick version of this when ever she is in short of time to grind masala powder. This dish uses very simple day to day ingredients but believe me it tastes so different and unique.Please try and let me know.

Ingredients:
1 1/2 cup rice
8-10 purple or green egg plants
3 green chilles
1 teaspoon chilli powder
1 teaspoon coriander seeds powder
1 teaspoon urad dal
1 teaspoon channa dal
1/2 teaspoon asafoetida
1/2 teaspoon turmeric powder
1/2 teaspoon black pepper powder
10-12 curry leaves
Salt
Sesame oil
Method:
1. Cook rice with just enough water up to 2-3 whistles.Once pressure is released add 2 teaspoons of sesame oil and fluff up a fork to make grains separate.
2.In a kadai heat little oil,add urad dal,channa dal and fry well.Next add green chillies,asafoetida,turmeric powderand fry well.
3.Add the cut egg plant,chilli powder,salt and saute well for 10 minutes
4.Lower the flame and add the rice slowly.Add coriander seed powder,pepper powder,2 teaspoons oil and cover for 5 minutes. Now gently mix thoroughly with out breaking the rice.
Time:30 minutes
Serves: 4

Notes:
1.You can replace ghee with sesame oil
2.Green egg plants will be very tasty compared to purple one's
3.Don't miss pepper powder as that gives a very unique taste.
