~kasbah Chicken Skewers~

There’s something about simplicity.  While this recipe has a list of spices, it’s actually a VERY simple creation~~the big thing is just bringing together the spices!  I’d recommend that you double the spices and save about half of it for your next dish~~whether it’s chicken or veal or pork or fish, it’s gonna work well and make your palate tingle with happiness!

Middle Eastern spices are all about putting together the sweet with the savory.  The hints of allspice and cardamom, then you have to have the mint…oh, yes, this just creates for your dish an array of flavors that will make you feel like you’re in the Grande Bazaar of Istanbul of the Jersusalem Market~~Mahane Yehaunda Market!  I can just imagine being in Casablanca with these skewers~~the smells, the sounds, the music, the sights~~create it at home with this recipe, and then let your imagination soar!

Serves: 4-6 

What you need:

6 (10”) skewers

3 large chicken breast filets

1 tsp smoked hot paprika

1 tsp sweet paprika

1 tsp cumin

1 tsp granulated garlic

1 tsp minced onions

1 tsp dried mint

1 tsp parsley

1 tsp sea salt

1/4 tsp cayenne

½ tsp cardamom

½ tsp allspice

½ tsp coriander

Cooking Spray

¼ cup extra virgin olive oil

What you do:

Pat out the chicken breasts somewhat.  Cut lengthwise into 4 strips.  Weave (as if you’re stitching a hem) two strips on each skewer. Coat with cooking spray. Put the skewers on a cookie sheet covered with parchment paper.

Combine the all of the spices in a bowl and blend.  Shake half of the mixture onto the chicken getting all over and into the nooks and crannies of the folds.  Give the chicken another coat of cooking spray and put on the remaining spice mixture.

Place the skewers on a hot grill (400-500) and cook about 20-25 minutes, turning several times and cooking until done.

Ready to serve just ‘as is’ and with olives and garlic as shown or with sides…your choice!
