kaju masala - cashew curry made with onion tomato base with little cream and cashew paste.Want to make this like restaurant style and just with cashews but i want something crunchy and some extra color ,so added a handful of fresh green peas in the recipe.This curry goes well with rotis,parathas,rice varieties too.

I bookmarked and watched so many videos of making kaju or cashew curry and there they mentioned simply dry roast them in tawa and it to the masala or roast it with ghee.I dont want to make more more fat so i simply soak the cashews for 2 hours and then added it to the recipe.Use whole cashews if you are not roasting them in the pan or tawa.

I bought some cashews for making a sweet but i changed my mind to make it to savory recipe.V told me about the kaju curry he tasted during his trip last month in a dhaba.He told the gravy was so rich and had a silky texture and they added whole cashews in it.Immediately i want to try the recipe according to the recipe he tasted there and he also added that it resembles little bit butter masala version.So having ingredients in pantry i made this curry the very next day he came home.

keeping matar paneer recipe in my mind,i made this one but this required onion paste,tomato puree along with creamy cashew paste individually to make it more creamier.I made methi paratha that day and that was the prefect one for the rainy day.I just missed blogging this whole month and i dont want to make this month empty in my blog.So once i got connection,i immediately uploaded this recipe.Without internet,no blog hopping,no social media but those days were really calm and discussed so many recipes with my friends and family.Sure you will expect more restaurant style recipes here and those are really easy to make in home.

If you are looking for the color,i used normal red chilli powder in the recipe and added cream,so it is little bit orangy.You can add kashmiri red chilli powder in the recipe to make it little bit darker in color.I roasted few cashews in ghee just for presentation,you can also use broken cashews in the recipe too.I added kitchen king masala for some extra flavor and it is purely optional.Lets move on making the recipe.,

cashew curry recipe with onion tomato base

  • cashews - 100 gm
  • fresh green peas - 1/4 cup
  • onion - 2 nos ,roughly chopped
  • tomato - 3 nos
  • cashew paste - 1 tablespoon
  • cream - 1/4 cup
  • ginger garlic paste - 2 teaspoons
  • red chilli powder - 1 teaspoon
  • turmeric powder - 1/4 teaspoon
  • coriander powder - 1 teaspoon
  • garam masala - 1/4 teaspoon
  • kitchen king masala - 1/2 teaspoon(optional)
  • kasuri methi - 1 teaspoon,crushed
  • bay leaf,cinnamon,cardamom,cloves - for tempering
  • salt - to taste
  • ghee or oil - as needed
Instructions
  1. soak whole cashews in hot water for 2 hours.Take come broken cashews and soak in warm water and make a smooth paste.
  2. Heat a teaspoon of oil in a pan and saute onion in low flame and make a fine paste from it.
  3. Make tomato puree from 3 tomatoes by boiling in water for few minutes and then blend it.
  4. Heat 1 tablespoon of ghee in a kadai and add bay leaf,cardamom,cinnamon and cloves.
  5. Now add ginger garlic paste to it and saute it well.Add onion paste and saute it till oil separates.
  6. Now add fresh green peas and give a good mix.Add turmeric powder,red chilli powder,coriander powder and kitchen king masala and add 1 cup of water and allow the peas to cook.
  7. Add the tomato puree once the water evaporates and peas cooked well in that.Give a good mix and saute it till the oil separates and water evaporates.
  8. Add cashew paste and enough salt for the recipe and add little more water to adjust the consistency.
  9. Once it came to boil,cook in low flame for about 3 minutes.Finally add soaked cashews and cook it for another 2 minutes.
  10. Add 1/4 cup of cream in low flame and keep on mixing.If required add little more water ot adjust the consistency.
  11. Switch off the flame and add garam masala and kasuri methi and mix it well.serve piping hot.
