It’s Easy Being Green: Smoothie Recipe

By Thepickyeater @pickyeaterblog

I am a huge fan of green smoothies. It’s the easiest way to get a ton of fruits and veggies (especially green veggies which are the best for you!) into your diet in an easy, quick, and effortless way.

I recently bought a Vitamix when we moved to our new house in Ann Arbor, because 1) it was a moving gift to myself 2) I wanted a more powerful blender with the ability to make food in bulk and with easier cleanup for making Layla’s baby food and 3) we finally had the counter space to store it!

The Vitamix is definitely pricey, but it is worth every penny. The husband was super skeptical when I bought it and now he uses it more than I do to make green smoothies! Amazing right? I made him a believer

This particular smoothie recipe is awesome. It has – 3-4 cups of spinach in it, but you won’t be able to taste it at all! The Vitamix comes with a whole binder full of recipes, so I took one of theirs and modified it slightly to make it a little more nutritious. It is super tasty and refreshing, and you end up getting 2-3 servings of fruits AND veggies in one big glass!

The Ingredients

  • 1 cup red grapes
  • 1 medium orange, peeled and halved
  • 1/4 cup fresh pineapple chunks
  • 1 medium banana, peeled
  • 1 carrot, halved
  • 3-4 cups fresh spinach, washed (if you’re skeptical about the taste, start with 3 cups and then add in 1 more )
  • 1 fuji apple, quartered and seeded
  • 1 cup of ice

The Directions

Step 1: Put all ingredients into your blender (or Vitamix if you have one) in the order listed and secure the lid.

Step 2: Turn your blender on to it’s lowest speed setting, and slowly increase the speed to high. Blend for 1 minute or until all of the ingredients have been pureed and the smoothie is the consistency you want it to me (our ideal consistency: no clumps, no grainy texture, totally smooth).

Serve cold and enjoy! It’s a smoothie with the consistency of a milkshake that you can feel great about drinking
