Huabu in the 9th: American Chinese Eat-in/take-out. Under Construction

Huabu, 67, rue du Faubourg Poissoniere in the 9th, 01.45.89.16.94, closed Sundays (Metros: Poissoniere or Cadet; Bus #80) is the third creation of Kristin Frederick, after the Camion Qui Fume and Freddie's Deli and she told me, she about to open a fourth place - a sit-down restaurant - what a woman!  Now, as my loyal readers know, I eat French-French food at lunch but sometimes wander off the road to have "ethnic"stuff at night.  And I detest the Asian Take-Out places here whose food is fungible and barely edible.  So, this was a chance to have Chinese food Amurican style (that is, stuff like General Tao's chicken, beef with broccoli, chop suey or Fortune cookies.)

So I'm waltzing in at 14h40 (it closes at 14h30) and seeing the empty cooking station, think, "OK, some days it works out - other days not so much" but the chief wait-guy and for all I know, manager, immediately brings up some noodle dish and General Tso's chicken, and just as suddenly Ms. Frederick appears at my elbow and we have a lovely chat (she had written my eons ago asking why I never came by to try her hamburgers and I replied I would if I could jump the 1.5 hour line but old guys like me are impatient, I mean we could croak before the burger appears.
