How to Make Honey Dried Pink Lady Apple Crisps

Early this week, we went to shopping in Morrisons and could not find any Fuji or Gala apples available.  They are my husband's favorite choices for red apples.  So he decided to try the Pink Lady as an alternative.  However, the apples were slightly too acidic for him.  Mr C has sensitive teeth and cannot take any fruits that are a bit sour.  So I decided to use the apples to make Honey Dried Pink Lady Apple Crisps.  We were given a Pink Lady apple for our Bloggers' Night In and I think they are crunchy, juicy and tangy.  I remember I came across their recipes on their site and I think this will go down very well with the kids too!Ingredient:Pink Lady ApplesRunny HoneyMethod:1. Wash the apples thoroughly and wipe dry.
2. Preheat the oven to Gas Mark 4/180°C/fan oven 140°C.
3. Using a sharp knife, thinly slice the apples into rounds about 3 mm thick.I find it quite hard to cut it evenly so in the end, Mr C had to come and help!
4. Discard any pips (leave the core) then arrange on a wire rack placed over a baking tray.  Brush one side with half of the honey.  We used an essential honey instead of those expensive honeys as we debated on how much difference a top quality honey would make to the final taste.
5. Bake the apples for 15 minutes, turn over and brush the other side with the remaining honey.  Bake for another 15 minutes or until lightly golden and crisp.  I found that the apple crisps at the end of the tray tend to brown, so next time I won't overfill with too many near the edge or I may swap them into the middle partway through.
6. Lay out the apples on a sheet of baking parchment and leave to cool.  When I took them off the tray, some were quite soft but once I left them cool and dry, they became crispy.

Both of my children were not very keen on the apple skin but we both felt that it was nice to eat it.  It was really very crunchy and tasty!  There is quite an amount of effort for a relatively little amount of apple crisps but it was worth it as it involved the whole family to bake it.  It is a great way to spend family time!
