Oh, Star Wars™, you have taken over my social media for the past month, but I don't hate it. It has been so fun to see everyone excited about the new Star Wars™ movie; it makes me feel like a kid again. I've also been seeing Star Wars™ all over Walmart, lately, and I couldn't help but pick up a few products for myself (had to dig out the R2-D2 Star Wars™ toy from my Honey Nut Cheerios® box as soon as I got home). With all of the excitement, I decided it would be fun to make and share a little recipe using my Star Wars™ Honey Nut Cheerios® cereal. This recipe for Honey Nut Cheerios® Breakfast Bars is perfect to start your day with, along side some delicious Star Wars™ Go-Gurt®, or to snack on during a showing of the new Star Wars™ movie. Plus, it's super easy to make and only takes a few minutes.

Serving Size: 1 2x2 inch bar
For this recipe, you will need:
6 cups Honey Nut Cheerios®
1 1/2 cups Peanut Butter
1/4 cup Coconut Oil
3/4 cup Corn Syrup
1 tsp Salt
1/2 cup Dark Chocolate Chips
1/2 cup Coconut Strips
Directions:
Measure out the Honey Nut Cheerios® into a large bowl. In a sauce pan over low heat, melt together your peanut butter, corn syrup, and coconut oil. They will melt VERY quickly, so stir continuously and don't walk away from the pan. Once they have melted completely, pour the contents into the Honey Nut Cheerios® bowl. Stir together so that the Honey Nut Cheerios® are coated completely. Press the Honey Nut Cheerios® into a casserole dish and then sprinkle the chocolate chips and coconut strips on the top. Melt a little more peanut butter and drizzle it over the top of the chocolate and coconut for looks and to help keep them in place. Place the casserole dish in the freezer and let it set. Slice it into bars and wrap individually in saran wrap.
I love the combination of honey, peanut butter, coconut, and chocolate with these bars. The salt also adds a bit of a savory touch, making it the perfect combination for a breakfast or energy bar- which is a good option for all of you late night Star Wars™ movie goers!
