Honey Garlic Baked Pork Chops

2 tbsp olive oil
1/2 cup honey
1/4 cup soy sauce (low sodium recommended)
4 cloves garlic, minced
2 tbsp apple cider vinegar or lemon juice
1 tbsp Dijon mustard (optional for depth)
1/2 tsp ground black pepper
