Homemade Schezwan Sauce

Making Sauces Homemade is my new interest now. To start with I have made the Homemade Schezwan Sauce. I have also made Schezwan Veg Noodles right away. It was too good just like the one we get in Restaurants.

Ingredients: Red Chilly- 100 g Garlic- 50 g (Chopped) Pepper- 2 tsp Soy Sauce- 1 tsp Red Chilly Sauce- 1 tbsp Tomato Ketchup- 1 tbsp Oil- 5 tbsp Hot water- 250 ml
Method: Soak red chilly in hot water for 30 minutes.
Drain the hot water and grind the red chillies along with a piece of ginger to a smooth paste. Use the drained hot water to grind little by little. Use the excess water to make the sauce. Heat oil in a wok and add chopped garlic. When Garlic is well fried, add ground red chilly paste. Fry for a minute and add tomato ketchup, red chilly sauce and soy sauce. Add pepper powder and mix well. Simmer the flame and stir continuously till the sauce thickens. Once sauce is thickened let the sauce cool down completely. Transfer to a glass bottle and keep it tight. Use dry spoon to cook with the schezwan sauce.
