Homemade Egg Noodles

Considering how much I absolutely love and adore pasta, I’m surprised that I’ve never attempted homemade pasta myself. I was doing a little research and found out that there really aren’t too many ingredients and it really didn’t look all that hard to make it, so I gave it a shot!

Homemade Egg Noodles Recipe:

2 cups all purpose flour
1-1/2 teaspoons salt
2 large eggs
1/3 cup water

You’ll want to whisk your flour and salt together in a large bowl. Then, lightly beat your 2 eggs in with your 1/3 cup of water. Pour the egg mixture into the flour.

Work the dough with your hands until all the flour is incorporated and you have a ball of dough. Cut the ball of dough into quarters.

This is important: You’ll want to wrap each quarter in plastic wrap to keep it from drying out while you roll it out and cut it.

Lightly dust flour on your counter or cutting board and take one quarter of the dough and roll it out to about 1/8″ thickness.

Using a sharp paring knife, cut the dough into thin strips. You can make yours longer if you want, but I like mine to be bite size-ish.

Lay the noodles flat on parchment paper to dry for at least 2 hours.

They may still be a little sticky after 2 hours, but you can still cook them! Cook these in boiling water for 10-15 minutes, until they’re tender but not mushy.

If you’re not cooking immediately, place them in an airtight bag or container until you’re ready to use them.
