Homemade Digestive Cookies

Hello my lovely food lovers and happy 2015 to you all!

I am back to Shanghai after having spent 3 weeks in Italy. I originally planned to be blogging while on vacation as I though I would have had more time, but between family, friends, shopping, dinners, lunches and coffees I found myself with zero time to spend in front of my computer. And I'll tell you something, I am happy for this internet break.

Before the holiday, the 13 hour/day working schedule had pretty much burned me out and I so much needed some "recovery time". But now I am back and full of energy.

While home I did some cooking and I will very soon share with you here the recipes that I made. But for today I want to post theses cookies that I made when I was still in Shanghai. This is the homemade recipe for the so famous British digestive cookies.

Ingredients (makes 25 cookies)

  • 150 g whole wheat flour
  • 150 g oat bran
  • 150 g unsalted butter
  • 80 g brown sugar (dark)
  • 1 tbsp honey
  • 1 tbsp baking powder
  • 2 tbsp milk (whole fat)
  • 1 small egg
  • pinch of salt

Combine all the ingredients into a bowl of your electric mixer

mix just enough so that the batter comes together

cover in plastic wrap and with a rolling pin roll out the batter into a 1/2 cm thick circle

Place into the fridge for about 30 min or into the freezer for 15 min

Using a 3 cm diameter cookie cutter, get about 24 cookies. Place them on a baking tray (previously covered with parchment paper)

and bake at 180 (pre-heated oven) for about 12-15 min. Remove from the oven and let the cookies cool down on a wire rack

These cookies are extremely simple, yet so delicious and pretty!

Serve them with your afternoon tea or for breakfast or as a quick snack before the gym! The oat bran will help you feel full for a long time!
