Fructose Free Coffee Ice-cream

and it’s homemade!

Although she’s not sponsoring this post, I do need to thank Aunty Jill for the Cusinart ice-cream maker I got for Christmas. We all know that kitchen appliances come and go, right? BUT this one is seriously getting a workout during the summer heatwave we’re having and I am putting my re-found ice-cream addiction out there.

It’s really the perfect cool-off treat in summer isn’t it? And just a wee bit indulgent too …

There’s something about homemade anything that smacks of goodness and ice-cream that’s made in your kitchen, and not in a factory, just tastes SO much better. No added nasties, there’s just what you want to put in and the potential flavours are only limited by imagination. If you’re a frozen yoghurt, gelato or sorbet fan too, then this is a gadget worth playing with ;)

Because I’m being conscious of my sugar (fructose) intake, I’ve been able to modify recipes (well kind of just make them up) and all of the half dozen batches so far have been winners. As you’ll know I’m no star in the kitchen, so to me this is a really big deal!

I’ve always been a sucker for coffee flavoured ice-cream and so I thought I’d share tonight’s coffee ice-cream adventure with you. I’ve created this little masterpiece with what I had on hand and the taste test has been conclusive – it’s DELICIOUS!

Ingredients:

1 x 600ml cream

1 x tin evaporated milk (which I had refrigerated overnight)

milk (I filled the tin to rinse it – that’s such a lazy measurement isn’t it?)

2 tablespoons Bushells coffee and chicory essence (in the tea/coffee aisle)

1/2 cup dextrose (glucose powder – it’s a fructose free sweetner) – as it’s not as sweet as sugar, you can use regular sugar but I’d go for less

Method:

Lightly whisk all ingredients together

Tip into ice-cream maker and churn for approx 30 mins

Serve immediately as soft serve or send it to the freezer for a firmer ice-cream later on
