Homemade Banana Peanut-Butter Cups

Do you crave ice cream on a daily basis? Long for a chocolately treat at all hours of the day? Do you wish there was a healthier option that is just as satisfying as a pint of Chunky Monkey or Peanut Butter Ripple… well now there is!

These banana peanut-butter cups are so decedent and delicious, it’s hard to believe they are a healthy dessert. You’re still consuming sugar and fat, so don’t go overboard, but those components should help with your portion control by keeping you satiated.  There are added benefits in the banana (potatssium & magnesium) dark chocolate (antioxidants) and peanut-butter (protein) which makes this snack virtually guilt-free.

What You’ll Need:

  • ripe bananas
  • dark chocolate bars or bakers chocolate
  • peanut butter of your choice (for extra health-benefits, choose organic or all natural!)
  • toothpicks (optional)
  • wax paper

Step 1:

Sandwich a small dollop of peanut-butter in between two banana slices cut 1/4″ thick. Use a toothpick to secure the sandwich. Place in the freezer for 10 minutes so that they harden. This makes it easier to coat them in chocolate.

Step 2:

Place chopped up chocolate bars or baking chocolate into a microwave safe bowl. Melt the chocolate in 30 second intervals- stirring between each- until it’s nice and smooth. Do not over-microwave or the chocolate will burn and become chunky and disgusting.

Step 3:

Gently dip each banana peanutbutter cup into the chocolate until full covered, and place on wax paper. Stick them in the refrigerator or freezer for a few minutes until the chocolate has hardened. Then devour them!!
