Holiday Treats:
Paleo Eggnog Chia Seed Pudding
How is this a Paleo recipe? First, because it is dairy free, no added sugar, and no preservatives. In fact, the pudding texture that you will taste coming from the treat is created by the chia seeds themselves. See, chia seeds expand naturally, and take the form of a tapioca texture.
Now, here is the thing:
For the seeds to expand and soak in the liquid medium where it is placed, then you need to leave them soaking for more than 10 minutes, preferably 20-30. This is what may take the bulk of your time, so consider that when you are planning to make it.
Here is what you will need.

- Blender
- Boiler

- 1 cup full fat coconut milk
- 2 eggs (yolks)
- Vanilla extract to taste (do not add too much or it will taste medicinal)
- Cinnamon and nutmeg to taste
- 3 tbsp chia seeds
- 4 dried dates or dried figs
Procedure
- Boil the dates for about 20 minutes for them to get soft. Once they get soft, toss the water and add all the other ingredients in. Put it all together in the BLENDER.
- High speed blend until all is smooshed together, especially the dates
- Use a boiler pot to heat up the mix on low. Stir the ingredients constantly and quickly to prompt the chia seeds to expand and get the mixture “plump.”
- Be sure it does not get too thick or else it will become a flan, and you do not want that.
- For it to cool down, store it in a container in the fridge for over two hours.
