Paleo Apple Cinnamon Chia Seed Pudding


Nothing is more homely than the smell of apple cinnamon anything coming out of your kitchen. This paleo apple cinnamon chia seed pudding is the one of the easiest DIY holiday treats of the season.

The dairy substitute will be coconut milk, unsweetened, and apples will be the “meat” of the recipe. Let’s jump right in!

Here is what you will need:

  • 2 cups of coconut milk (almond milk is also good, but is thicker in consistency)
  • 1 teaspoon of each of these three extracts: coconut, vanillaand almond
  • 2 chopped Granny Smith apples (green ones)- No need to peel them.
  • ⅔ cup of chia seeds
  • ¼ cup coconut flakes, preferably crunchy
  • 1 tbsp cinnamon

Technology:

  • Saucepan
  • Bowls

Procedure:

  • Pour the liquids into the saucepan, low heat, 3 minutes
  • Toss in the chia seeds once the liquid is warm (not boiling),
  • The chias will expand themselves in the liquid, soak it, and then take in a pudding texture without the need for arrowroot or any other thickener.
  • Leave it there, stirring, and see where the consistency reaches a point that satisfies you.

When you serve it, top it with the flakes, apples and cinnamon

Alternatives

  • Add pineapple chunks to the mix and make it a “pina colada” flavor
  • Add bananas for more nutritional punch
  • Add cherries and strawberries
  • Slivered almonds on top bring out a lot of crunch
  • Paleo granola is also a good topping for pudding

Do not forget:

Pudding is also great when eaten frozen. Pudding pops are awesome, so transfer the pudding to a Popsicle mold and freeze overnight for a super savory treat.
