Looking for a quick dessert on the cheap?


 As a chocoholic, I'm always looking for easy ways to get my fix.  That means that when a craving hits, I just want to be home watching a Disney movie under the covers and eating something... NOW. I don't want to go to the store and I don't want to have to deal with an eleventy-billion step process that makes me think I should have just gone to the store after all and picked up an entire sheet cake for myself. This is dangerous thinking, as if thinking like a woman wasn't dangerous enough.  They sell entire sheet cakes for $10...don't do it! It's a trap! 

I decided to binge out on a somewhat healthier, WAY more delicious option.  Four Eggs, one jar of Nutella and some sweet sweet lovin' are all you need to get your chocolate cake on.  
I'm also taking a few diet-friendly steps to get to the ultimate goal of eating something terrible for me: a) I'm making it myself (diet books always say you should cook because it prolongs your noshing from a ready to go bag or - in this case - cake box). b)There is no added flour, butter or oil. c) it's super rich so you "won't eat as much".  (This is a lie and we all know it, but hey, we're trying!)

Let's get started... I can sense your chocolate wanting crazy eyes.First spray a cake pan with cookie spray. Then line the pan with parchment paper.Cut down the sides of the parchment to cover the pan. This is a very sticky batter and will get in all the nooks and crannies. Preheat your oven to 325 degrees.Crack four eggs into a large mixing bowl.Whip the eggs on high for 7-10 minutes or until the foam has tripled in size.Microwave your small jar of Nutella (13 oz.) 10 seconds at a time, stirring in between to make it more pliable. Fold 1/3 of the jar in to your egg batter until it's thoroughly incorporated.Repeat this step 2 more times, incorporating the whole jar into the egg mixture.

Fold fold fold until everything is nice and smooth.



Pour the batter into your cake pan and carefully drop it on the counter a few times to knock bubbles to the surface so they pop. This is a very porous batter.


Bake your Nutella Egg cake for 15-20 minutes or until an inserted toothpick comes out clean.


Let your cake cool. Then begin tearing off the sides of the parchment paper.

Then flip the cake and carefully tear off the rest of the parchment paper. Slice it up and dig in! 

For a sweeter approach: serve with scoop of vanilla ice cream or top it off with a dusting of powdered sugar. Enjoy!
