I'm working my way through my summer glut of tomatoes and zucchini at the moment. So all the recipes I cook seem to have one or the other in it. I'm not complaining mind; it's so easy to make healthy food when you have a wealth of fresh vegetables at your fingertips. Although just when I think production is tapering off, I found a huge zucchini I somehow missed hiding in the garden this morning. So keep an eye out for more zucchini recipes next week.
This week's winter meal plan is also packed full of healthy food options, some of which make great leftovers. Pack the cold frittata into lunchboxes, and serve the Swedish meatballs with loads of mashed potato. Make extra mash, and you will have be halfway to leftover mashed potato and corn pancakes.
