Healthy Weekly Meal Plan – Week 37

This week's menu plan is full of simple dinner ideas for the cooler temperatures. If you are in need of a little comfort try our lasagna pierogis and baked Italian meatballs, or whip up our beer brats. And why not use up the last of the summer peaches in our delicious dessert.

My meal plan went out the window this week. I had it all written, and had done all the shopping, then realised I had read my calendar wrong and I that I had not one but two events right on dinnertime this week. This necessitated a quick menu rethink, taking into consideration what I had on hand and what meals would be OK to reheat. Time to drag out the gadgets.

Thank goodness for the slow cooker and a good chicken curry. And I would have been lost without my rice cooker and it's automatic timer. I can't rave about this machine enough.

Spring Meal Plan

Monday: Gnocchi with Chorizo & Spinach.

Tuesday: Pan fried fish, served with steamed asparagus & Easy Baked Sweet Potato Chips.

Thursday: The Spice Tailor Classic Butter Chicken, served with The Spice Tailor Black Makhni Daal, steamed basmati rice and naan bread.
