Healthy Kale Crisps/Chips

By Tejal Hewitt @Tejal_x

I'm known to be a snacker, specially a late night snacker. So these healthy very low-calorie crisps are the perfect little snack. I used salt and vinegar flavouring, however you could flavoured with anything that takes your fancy such as chilli and lemon, salt and pepper, cajun spice even sugar for a sweeter variety. When you buy them pre-made from the shops they have so many additional ingredients you haven't heard of, so it's satisfying to make it yourself.

Did you know that raw kale is rich in vitamin A, C, K, E and B6 as well as high in folate, manganese, iron, calcium and potassium. It's like a super food, we all know that leafy greens are good for you, but when they are full of nutrients how can you say no to a bowl of crisp healthiness.

Now when putting these little green leaves in the oven, you do have to keep checking them as there is a fine line between crisp and burnt, as I've learned the hard way. The baking process takes a little time, as you want to make sure you don't have soggy crisps, but lightly crisp.

Ingredients:
250g Fresh Kale
1 Tbsp Vinegar
Salt
Pepper
Oil Spray

Add fresh kale, vinegar, salt and pepper to a bowl. Toss together mixing well all the vinegar into the kale.

Spray a baking tray with a little oil, and lay out the kale over the tray, making sure the pieces do not over lap.

Bake in the oven at 170c for 10-12 minutes until the kale is crisp.

Repeat until you a big bowl of kale crisps.
