Healthy Banana Muffins

Banana is commonly consumed across the world as it plays a vital role in boosting our energy. Often used for toppings and sinful desserts, it has umpteen benefits which can make us drool worthy to use it in our regular diet. It’s loaded with high fiber content and essential vitamins and minerals such as potassium, calcium, manganese, iron, folate, and B6. But bananas quickly go ripe from spotted to brown and we throw them out of our kitchen unknowingly the fact that we can make healthy muffins out of it. Ripe banana is a great ingredient for making muffins which not only sweeten the muffins but also makes it moist. Banana muffin is a scrumptious delicacy which I prefer to serve as dessert or party starters for my family and guests. Also when I crave for desserts, I can have these healthy muffins instead of grabbing unhealthy doughnuts which are loaded with sugar. Besides, these muffins are low fat, moist, low sugar, and low calorie and most importantly it’s a kid-friendly.

 Let’s quickly dig into the recipe below:

Ingredients:

  • Apple sauce – ½ cup
  • Maple syrup/ honey- six tablespoon
  • Flour- 1 ½ cup
  • Baking powder- 1 teaspoon
  • Baking soda- ½ teaspoon
  • Overripe mashed bananas – three
  • Eggs- two
  • Vanilla essence- 1 teaspoon
  • Oil- 1/3  cup
  • Salt-  ½ teaspoon

Preparation:

1. Mash Bananas and Eggs

Preheat your oven to 375 degrees F (190degrees C) and grease the non-stick muffin tin with cooking oil or butter. Set aside.

In a mixing bowl, add bananas and mash well with a blender. Then add eggs and using the same blender whip the eggs.

2. Add Other Liquid Ingredients

Now add applesauce, maple syrup, oil, vanilla essence, salt, baking powder, and soda. Whisk to commingle or use the same blender to whisk.

3. Add Dry Ingredients

Add flour and gently stir until well incorporated. Give a few stirs and let the batter sit for a few seconds. Then fold the batter in a different direction. Try to scrape from the very bottom.

Do Not Over Mix

When you mix strenuously for a long period of time, gluten in the flour will start to develop. Muffins will come out rubbery and tough.

Possible Add-Ons

This recipe is for plain banana muffins. You can add ½ or 1 cup of these add-ons without any other changes to the recipe:

  • Nuts: chopped or pieces. Walnuts, pecans etc.
  • Chocolate chips
  • Blueberries: fresh or frozen.

4. Bake

Fill each opening almost full with batter (I used regular ice cream scoop) and bake muffins for 22 minutes or until a toothpick inserted in the center comes out clean.

Let muffins cool for about 10 minutes and then transfer to a cooling rack to cool off completely.

Your healthy banana muffins are ready to serve.
