Gluten Free Vanilla Cupcakes (topped with gluten free vanilla icing & sugar pearls)Need for Cupcakes: -1/4 cup of coconut flour-1/8 of a teaspoon of sea salt-1/8 teaspoon of baking soda-3 large eggs (I used organic brown eggs)-1/4 cup of shortening-4 tablespoons of honey or other sweetener (honey is the best though)-1 tablespoon of vanilla extract Need for Icing: -1 cup of confectioner's sugar -1/2 a cup of softened coconut oil-4 tablespoons of honey-2 teaspoons of vanilla extract-1/8 teaspoon of salt To make cupcakes:1. Preheat oven to 350 degrees.2. Place dry ingredients in bowl and sift together.3. Mix in (using electric beater) eggs, shortening, honey, and vanilla.4. Make sure mixture is mixed well.5. Line a cupcake tray with cupcake inserts (this recipe makes 5-6 cupcakes)6. Evenly distribute mixture into cupcake inserts.7. Bake for 20-23 minutes depending on oven. 8. Let cool for 30 minutes.To make icing:1. Pour confectioner's sugar and salt into smaller mixing bowl.2. Add in the honey, vanilla extract, and coconut oil.3. Beat well with electric beater to make a soft fluffy frosting. 4. Refrigerate if need be. Extra:If you would like or prefer, to add some flair to the cupcakes, dip them in sprinkles or into the sugar pearls (as seen in picture.) Enjoy this gluten free treat! xoBCC
