Halloween Ghost Cupcakes

I love baking, and when there is a reason like Halloween it makes it so much better. I decided to make some mini cupcakes that look like ghosts. Quick and easy, basic cupcake with frosting and little dark eyes!

Little Ghost Cup cakes are so cute and make perfect bite size treats for little trick or treaters on Halloween. Made in a mini muffin pan with mini cupcake cases are just perfect as a normal 12 cupcake recipe makes over 24 mini cupcakes.

My little mini Ghosts could also be mummys too - instead of using mini chocolate chips use some red balls or even red royal icing will do the trick - viola ghosts turn into mummys in a flash.

A quick tip is make the icing a little firmer than usually so that when you pipe over the mini cakes it holds it shape well and doesn't start to sink back into the cupcake.To get the rounded look, I used a disposal piping bag and just snipped off the end without using any kind of tip. My kids did help me ice a few and its a great way to spend time with the kids teaching them how to bake.

Ingredients
4 Eggs
8oz Margarine
8oz Caster Sugar
9oz Self Raising Flour
4 Tbsp Milk
2 Tsp Baking Powder
2 Tsp Orange Flavouring
Dr Oetker Orange Gel Colour
100g Butter
500g Icing Sugar
50g Cream Cheese
1 Tsp Vanilla
Splash of Milk
Mini Chocolate Chips

In a mixer add margarine and sugar, then cream together

Add eggs, 4 tbsp milk, orange flavouring and Dr Oetker orange food colouring and mix,

Add self raising flour and baking powder and cream together.

Scoop batter into mini cup cake cases and bake in the oven at 180c for 15 minutes

Make up some frosting by beating together butter, cream cheese, vanilla, milk and icing sugar, spoon into a piping bag and pipe over the cup cake and add mini chocolate chips as eyes.
