For today's quick tip recipe:
Preheat your oven to roast at 450 degrees.
Rinse the sunchokes, removing any "eyes" and cut them into large bite sized pieces.
Place them in a square baking tray.
Spray them with cooking spray, sprinkle them with pink Himalayan salt and ground pepper to taste, and pop them in the oven for 20 minutes or until tender.
When done, remove from the oven and place in a serving bowl.
Squeeze the juice of 1/3 lemon and some fresh, chopped parsley over the top and serve!
It's a fabulous, crunchy guilt-free alternative to roasted potatoes!
