Guilt-free Cookies

Despite the fact that I am trying to eat a clean, low-sugar, high in good fats and balanced diet, I still cannot say no to cookies. They are my addiction! I could not imagine my life without cookies...

So I have decided to compromise and make them a bit (a lot) healthier. Here is my recipe for what could be called "guilt-free cookies".

Ingredients:

  • 3/4 cup instant oats
  • 3 tbsp oat flour
  • 3 tbsp honey
  • 1/4 cup + 2 tbsp apple sauce
  • 1/2 tsp vanilla extract
  • 2 tbsp chocolate nibs
  • dash of cinnamon
  • 3/4 tbsp baking powder

Pre-heat oven at 180 C (375 F). Combine all the dry ingredients in a mixing bowl

Add the honey, apple sauce and vanilla extract

Stir them until all the mixture comes together, then add the chocolate nibs and stir again

Drop tbsp of dough on baking sheet

Bake for about 10 min. Remove from the oven and let them cool down completely on a wire rack.

Store in a air-tight container and enjoy for breakfast

or as a healthy snack
