Grilled Halibut Topped with Mango Basil Salsa

Ever since we lived in Florida and were spoiled by the overabundance of fresh fish everywhere, I have had a love for fresh fruit salsa topped fish. And since there was an over ripe mango staring me in the face, I knew I needed to run to the store for some fresh Halibut.

At first I was unsure of what type of fruit salsa I wanted to make, I had a basil plant I just purchased from Trader Joes, so I began to concoct a salsa recipe to see how it would taste. I soon became pleasantly surprised. Who knew a combination of mango, oranges, and basil would create such wonderful flavor??? I patted panko crumbs and ground flax seed onto the halibut and grilled stove top,  in olive oil. Topped it with the fruit salsa…. and….layered on a bed of long grain brown rice.

Wham! Bam! 

Easy Family Dinner right there. 

What you will need:

Enough Halibut for your family. 

{I usually buy a pound for two people…. with some left over for the pooch}

1/4 C. Ground Flax Seed

1/4 C. Panko Bread Crumbs.

2 T. Olive Oil

For the Salsa:

1 Mango Chopped

2 Mandarin Oranges Chopped

Handful of Basil Shredded or sliced.

1 T. Lemon Juice

Mix the panko bread crumbs and flax together, pat onto fish filets. Heat olive oil in pan, grilled until fish flakes easily with a fork…. 

While fish is grilling, mix salsa ingredients together.

I use the 90 second rice when I’m in a hurry.

When fish is done, spread out rice on a plate for each person, top with the fish, put a couple scoops of salsa….
